Ingredients: Flour, 200 gr Water, 100 ml Salt, a pinch Minced pork meat, 200 gr Carrot, 1 Leek, 1/2 Savoy cabbage, 100 gr Soy sauce, 2 tbsp Ginger to taste
Method: Place the flour in a bowl and add a pinch of salt then add the water. Knead the dough until it is firm. Then wrap in plastic foil and let it rest for an hour. Prepare the filling: wash and cut the leek, cabbage and carrot into small pieces. Put everything in a mixer and finely chop. Mix the chopped vegetables in a bowl with the minced meat then add the chopped ginger and the soy sauce to form a homogeneous mixture. Spread the dough on a flat surface and make circles with a cookie cutter. Roll each circle a little further, then place a generous spoonful of filling in the center. Close the crescent-shaped ravioli by pressing on the edges to make the dough stick. Then with moistened fingertips make small folds from one end of the raviolo to the other. Line the bamboo basket with cabbage leaves and place the ravioli on top. Close the lid and steam for about 15 minutes. As soon as the surface of the ravioli becomes slightly transparent, they will be ready. Serve the steamed ravioli garnished with soy sauce.
