Lebanon has always attracted different peoples for its natural resources. Lebanese cuisine is one of the most typical expressions of Middle Eastern cuisine. They use fresh ingredients, flavors, and refined spices. This cuisine is clearly influenced by the Arab-Muslim tradition, with a touch of France. To face with a demographic increase, they created numerous merchant trading posts, especially in northern Africa, in Sicily and in Sardinia. Lebanese cuisine is also suitable for vegetarians, because it includes many vegetable-based dishes, like hummus and falafel. Appetizers directly precede main courses: the selection of appetizers, called “mazze” is in fact one of the typical rituals of Lebanese cuisine. Lebanese cuisine uses a lot of fruits, vegetables, pulses, cereals and nuts. There are so many typical dishes in Lebanon but the most significant is hummus.
